This chart tells you the amount of each food type to eat for a set
number of mg of phytosterols. The literature offers the minimum amount per day
in various circumstances. For example several sources have
suggested 2-3 grams per day of phytosterols would cause a 6-15 percent blood
cholesterol reduction. The wheat germ study reported a 42% reduction. We do not
know the technical details of that study so the information is of interest but
not useful. The most useful study is the one about pistachios. We know the
subjects were fed 3 Oz (85.05g) of pistachios a day for 2 weeks and
achieved a cholesterol reduction of about 10%. We know the phytosterol
level of pistachios to be 214 mg/100g. We can calculate that the subjects
were fed 182 mg (214/100*85.05) of phytosterols per day for 2 weeks and
achieved a cholesterol reduction of 8.4-11.6%. This amount of phytosterols
is far less than the 2-3 grams per day suggested by other studies. Using
182 mg/100g of phytosterols to achieve a 10% reduction in cholesterol in 2
weeks, how many ounces of food in our list of high phytosterol foods would
